MIA’s is a declaration of unconditional love to the notion of family, the island with its beauty and flavours.
Inspired by the hospitality of her grandmother and the delicious flavors of Greece she experiences as a young girl visiting Greece from the USA. Sellia Georges chose an elegant Cycladic dwelling with a spectacular view, in the heart of Oia village in Santorini, to house the holistic and indulging experience that is MIA’s restaurant, meant for those who always expect more.
MIA’s starting point was Sellia’s expertise as a third-generation restaurateur from Chicago. In the beginning, MIA’s core team was comprised of herself and her father, Chris Georges, who embraced and fully supported her vision. Since 2021, the team has grown to include valuable members who give their fullest attention to the creation of MIA’s experience daily.
Mia’s team comprises of a plethora of people with different cultural backgrounds and expertise. The Kitchen team works on a daily basis with local purveyors on the island sources only the finest ingredients from the island of Santorini, Crete & the Aegean.
The heart of MIA’s cuisine – is chef Elli Mitrai. With her unbeatable talent, hard work and dedication, she transforms local ingredients into dishes that bring memories of home. The Brigade stands next to Elli, prepares each dish through the open kitchen with precision and love.
The front of the house comprises of hospitality experts who have history working in Athens & Mykonos. Combined they have over 100 years of experience bringing to each table a unique approach to the guest experience.
